Our oven croquette recipe is very easy to make yourself using just a few ingredients. The oven croquettes are soft on the inside and crispy on the outside and can be made without a deep fryer or ready-made products!
Crispy, golden brown croquettes are a popular side dish. Instead of fatty frozen foods, we have a recipe for homemade croquettes from the oven for you. You won’t believe how easy it is to make these yourself without losing any of the crunchiness. You only need a few ingredients for the basic recipe: potatoes, starch, egg and spices. If you like, you can also refine the potato croquettes with cheese and herbs. After about 25 minutes in the oven, you will have golden croquettes with a crispy breading that don’t need to be deep-fried. Like our homemade fries from the oven, the croquettes are also very popular with children! They are free of artificial additives and ideal for any banquet or as a snack in between.
3 tips for homemade oven croquettes
With these tips you can create croquettes that are not only healthier, but also taste great! Whether with ketchup or mushroom cream sauce, the potato side dish is simply delicious!
- potatoes: Choose floury potatoes for the homemade oven croquettes as they contain less water and ensure a better consistency. The potatoes are boiled with their skins on and, once cooled, peeled and pressed or mashed through a potato press. Before further processing, it is important that you heat the potato mixture on the stove while stirring constantly (this is called “burning off”) so that the excess liquid evaporates and the potatoes can be formed into croquettes.
- Breading: The breadcrumbs ensure the crispiness of the croquettes from the oven. Our tip: Add a little more Parmesan to the potato mixture or breadcrumbs for extra flavor! The Parmesan also ensures a good hold.
- oven: Who says taste always has to be high in fat and calories? Our homemade croquettes are heavenly without the need for a deep fryer – and they come straight from the oven! Instead of lots of oil, our recipe only requires a few tablespoons to brush on the breading. If you like the breading really crispy, turn on the grill function for a few minutes at the end.
Can you freeze homemade potato croquettes?
The good news is that you can easily freeze the homemade croquettes. After shaping, you can freeze them raw on a plate with baking paper and then store them in a freezer bag or freezer box. This means you always have fresh croquettes in stock that you can put straight from the freezer into the oven without defrosting them first. The baking time is then extended by approx. 5-10 minutes.

Croquettes
- Wash the potatoes and cook them in a large pot with plenty of water for about 20-40 minutes, depending on their size. Then drain, let cool briefly and peel.
1kg potatoes
- Press the still hot potatoes into a large pot using a potato press. Heat the hot potato mixture on the stove while stirring constantly so that the excess liquid evaporates and the potatoes can be formed into croquettes. Starch will probably settle on the bottom of the pot, but it shouldn’t turn black.
- The result should be a sprayable, soft and dry mass that has approximately the consistency of solid mashed potatoes. When the mixture has set, remove from the heat, season and stir in the two egg yolks (and optionally Parmesan and/or herbs).
2 egg yolks, 1 tsp salt, pepper and nutmeg, 100 g Parmesan, 2 tbsp herbs
- Let the mixture cool slightly and fill it into a piping bag. Alternatively, take one portion of the dough by hand. Shape the croquettes into the typical shape, namely rolls about 1.5cm in diameter and 4-5cm long.
Bread
- Then prepare two bowls. Add the two eggs to the first, add salt and whisk. Fill the second bowl with breadcrumbs. Now dip the croquettes through the egg mixture, let them drain a little and then coat them in the breadcrumbs.

- Then place it on a board. Place in the refrigerator for about 15-30 minutes so that the croquettes retain their shape while baking.
- Meanwhile, preheat the oven to 180 degrees top/bottom heat. Prepare 2 baking sheets with baking paper.
- Take the croquettes out of the fridge, place them on baking paper and brush with cooking oil.
4 tbsp cooking oil
- Put in the oven and bake for 25 minutes. Check whether the croquettes are already golden brown in color and crispy. Bake for another 5 minutes if necessary (optionally use the grill function at the end).
Our tip: Freeze the homemade croquettes before baking so you always have a delicious side dish on hand. The baking time is then extended by approx. 5-10 minutes.
