Pear-hazelnut financiers
For all of you who love desserts, let’s start with something sweet. This recipe from Fou de Pâtisserie is one of my favorite desserts recently.
Ingredients :
- 100 g of unsalted butter
- 100 g icing sugar
- 40 g of hazelnut powder
- 20 g of almond powder
- 3 egg whites
- 3 conference pears
Preparation :
- Preheat the oven to 180°C.
- Start by making a hazelnut butter by melting the butter over low heat. When the butter stops crackling and foaming, it will take on a nutty color and smell: stop cooking and filter through a sieve to remove the deposits.
- Let it cool before using it.
- Sift all the powders and mix.
- Add the egg whites and mix again.
- Finally, pour the cooled hazelnut butter over the mixture and mix one last time.
- Refrigerate for 30 minutes.
- Peel the pears and make balls using a Parisienne spoon.
- Butter 4 cm diameter nonnette rings.
- Using a piping bag, pipe the dough into the circles ⅔ full then place a pear ball.
- Bake for about 12 minutes.
- Let cool.
- Using a piping bag, pipe a little praline and sprinkle with chopped hazelnuts.
