Bratwurst Beer Goulash
Ingredients

potatoes - 2
cups
chopped bell peppers - 1
yellow onion - 2
garlic cloves - 5
bratwurst - 2
tablespoons
extra virgin olive oil - Kosher salt and freshly ground pepper
- 1
tablespoon
Sweet or smoked paprika - 1
tablespoon
tomato paste - 1
+1/3 cup dark beer - 1
cup
vegetable stock - 1 – 29
oz
can pureed tomatoes - 1/3
cup
chopped fresh parsley
Instructions
- Peel and dice the potatoes.
- Peel and dice the onion.
- Peel and mince the garlic
- Cut the bratwurst into rounds.
- Heat oil.
- Add the bratwurst and sauté for a few minutes until browned.
- Remove from the pan and set aside.
- Add the potatoes to the oil. Sauté them for a few minutes and then add the peppers, onion, garlic and sauté.
- Season with salt, pepper and paprika.
- Cook, stirring until the onions become soft.
- Add the tomato paste and stir to coat.
- Add the bratwurst back to the pan.
- Add the beer and vegetable stock,
- Bring to a boil. Turn the heat down to low and let simmer for 15 minutes.
- Add the tomato puree and bring to the boil.
- Season again to your taste. Add pinches of sugar if the liquid is too bitter.
- Let simmer for 25 minutes.
- Spoon into bowls.
- Garnish with fresh parsley and serve.
