Ingredients

  • 1.5
    lbs
    potatoes
  • 2
    cups
    chopped bell peppers
  • 1
    yellow onion
  • 2
    garlic cloves
  • 5
    bratwurst
  • 2
    tablespoons
    extra virgin olive oil
  • Kosher salt and freshly ground pepper
  • 1
    tablespoon
    Sweet or smoked paprika
  • 1
    tablespoon
    tomato paste
  • 1
    +1/3 cup dark beer
  • 1
    cup
    vegetable stock
  • 1 – 29
    oz
    can pureed tomatoes
  • 1/3
    cup
    chopped fresh parsley

Instructions

  1. Peel and dice the potatoes.
  2. Peel and dice the onion.
  3. Peel and mince the garlic
  4. Cut the bratwurst into rounds.
  5. Heat oil.
  6. Add the bratwurst and sauté for a few minutes until browned.
  7. Remove from the pan and set aside.
  8. Add the potatoes to the oil. Sauté them for a few minutes and then add the peppers, onion, garlic and sauté.
  9. Season with salt, pepper and paprika.
  10. Cook, stirring until the onions become soft.
  11. Add the tomato paste and stir to coat.
  12. Add the bratwurst back to the pan.
  13. Add the beer and vegetable stock,
  14. Bring to a boil. Turn the heat down to low and let simmer for 15 minutes.
  15. Add the tomato puree and bring to the boil.
  16. Season again to your taste. Add pinches of sugar if the liquid is too bitter.
  17. Let simmer for 25 minutes.
  18. Spoon into bowls.
  19. Garnish with fresh parsley and serve.
