  • Preheat the oven to 180°C top and bottom heat. Line a baking tin with baking paper and set aside.
  • Put the quark, eggs, lemon juice and zest, erythritol and vanilla pudding in a bowl and mix with a whisk.

    500 g quark with 20% fat content, 2-3 tablespoons lemon juice, 1 tsp lemon zest, 50 g erythritol, 4 eggs, 1/2 pack vanilla pudding

  • Tip: Optionally, the eggs can also be separated for a fluffy casserole. The egg yolks are then mixed with the quark mixture and the egg whites are beaten separately and carefully folded into the quark mixture.
  • Top the quark casserole with fresh or thawed and drained berries and bake in the oven for about 20 minutes. Place baking paper on the casserole so that it doesn’t get too dark and bake for another 20-30 minutes (depending on the height of the baking tin).

  • Tip: Be sure to thaw frozen fruit first and drain off any water that comes out, otherwise the casserole will be watery.
