Marry Me Chicken is basically a creamy tomato sauce with tender chicken, sun-dried tomatoes, garlic and a good portion of parmesan. The whole thing is prepared in one pot, which means less washing up and more time to enjoy! The pasta doesn’t have to be cooked, though. I personally prefer the second pot option because I think the pasta tastes better that way. But, of course, that’s something everyone can decide for themselves.
It’s that easy: Marry Me Chicken in just a few steps
Breading chicken: Mix the flour, salt and pepper and coat the chicken cutlets in it.
Frying: Heat olive oil in a pan and fry the schnitzels until golden brown. Set aside for a moment.
Make the sauce: Sauté the onion and garlic in the pan, add tomato paste, spices and tomatoes. Deglaze with stock and cream and simmer.
Final: Stir in Parmesan, return chicken to the sauce and garnish with basil.

Dried tomatoes in oil: The dried tomatoes are marinated in oil, which already has the aromatic flavor of the tomatoes plus a few other herbs. So why waste it? Use the oil from the tomatoes for frying – it gives them extra flavor!
Parmesan: Use real Parmesan, not ready-made grated cheese. The taste makes the difference! Grana Padano will also work, of course. If you have family members who don’t like Parmesan, then use an old Gouda that can be grated. This will also make a super aromatic sauce.
Fresh basil: Just before serving, sprinkle freshly chopped basil on top – it not only looks pretty, it also tastes fantastic.

- Put the flour, salt and pepper in a bag or bowl and turn the chicken all over.
- Heat the oil in the pan and fry the floured schnitzels for about 3 minutes on each side until they are golden brown. Then remove them and place them on a plate.
- Finely chop the onion and garlic, add 1 tablespoon of the dried tomato oil to the pan and sauté the onions and garlic in it, but do not let them brown. Stir in the tomato paste, then add the spices and the chopped tomatoes and deglaze with the stock and cream.
- Allow to simmer until the sauce has the desired consistency, add the parmesan and season to taste. Then put the chicken back in to warm up and add the juices from the plate.
- Garnish with chopped basil.
