French fries or simply fries originally come from Belgium and take their name from “Pommes de terre frites” (French: fried potatoes). They are a classic side dish for many dishes, such as breaded schnitzel. Traditionally, fries are fried in fat in two passes, so they become crispy on the outside and soft on the inside. With our recipe for crispy fries in the oven, we show you a significantly lower-fat and at least as tasty alternative as you can make yourself at home. Because who wants the smell of hot fat in the kitchen?

Make your own fries in the oven – this is how it works

You can easily make fries yourself from fresh potatoes in the oven. And to make your fries nice and crispy, you don’t need a deep fryer. It is important that the fries are baked from the oven at high heat, so make sure that you use circulating air and that your oven is well preheated.

You can use the potatoes with or without the peel and then cut them into evenly sized sticks about 1 – 1.5cm wide. For a particularly crispy result, we put our raw fries in ice water for half an hour so that excess starch is removed from them and they don’t become soggy later. Now dry the potato sticks well, mix them with the spices and olive oil and put them on a baking tray. And then into the oven. They taste particularly good with our homemade ketchup.

How long do homemade fries take in the oven?

Depending on how thick they are cut, your oven fries will take approx. 25-30 minutes. First you bake them for 10 minutes at 200 degrees with the fan function. To ensure that the fries cook evenly, you should turn them halfway through and then bake them for another 10 minutes. For a particularly crispy result, you can then switch on the grill function at 250 degrees for another 5 minutes.

When your fries have an even golden brown color, they are usually ready. If they are still too light or unevenly browned, they most likely need a few more minutes. They should be nice and crispy on the outside and tender but not soggy on the inside, then you have the perfect fries. And because fries taste best fresh, we simply make our french waffles from the leftovers the next day.

Oven fries are definitely a healthier, simple and delicious alternative. To ensure that they are just as crispy and aromatic, there are a few simple tips and tricks.

  1. In order to make crispy oven fries yourself, it is important that the potatoes have the right starch and moisture content. We like to use a potato variety that is as waxy as possible, such as Sieglinde or Linda.
  2. Before baking, soak your oven fries in ice water for at least 30 minutes to remove excess starch from the potatoes. Then dry it well.
  3. Optionally, you can roll your potato sticks in a little starch (e.g. corn or potato starch). The starch absorbs moisture and ensures that your fries brown faster and become crispier on the outside, while remaining nice and soft on the inside.
  4. Spread your fries on the baking sheet so that they are not on top of each other. If you use 2 trays, you should swap them halfway through.

  • Wash the potatoes thoroughly, cut out any bad spots and cut into sticks approx. 1 – 1.5 cm wide. Place these in a large bowl with a few ice cubes (optional), cover with water and let steep for 30 minutes.

  • Remove the potato strips from the ice bath and pat dry with a clean kitchen towel. Mix in a bowl with spices and olive oil and then spread on a baking tray. The fries should not touch each other while baking.

    3 tbsp olive oil, 2 tsp paprika powder, 1 tsp salt

  • Preheat the oven to 200 degrees top and bottom heat and bake the oven fries for 10 minutes. Then turn carefully and bake for another 10 minutes. Depending on how thick the potato strips are, the baking time can be extended by around 5 minutes. Bake for another 5 minutes at 250 degrees using the grill function. Place a wooden spoon in the oven door to allow the moisture to escape.
  • Take the finished fries out of the oven, add more salt if necessary and serve with ketchup, mayonnaise or BBQ sauce.
