Instructions
Spiced Simple Syrup:
- Whisk together spices.
- Place all ingredients in a saucepan.
- Cook, stirring until the sugar has dissolved.
- Remove from heat and let cool.
Spiced Streusel:
- Whisk together the spices and salt then whisk the mixture into the flour.
- Add the sugar and butter.
- Combine the ingredients until streusel forms.
- Cover the bowl and place in the refrigerator.
Spice Cake:
- Peel and core the pears, and slice them into pieces.
- In a pot whisk together 1 cup water and 1 cup spice simple syrup*.
- Add the pear pieces, bring to a boil. Reduce the heat and simmer for 5 minutes.
- Remove from heat. Set aside.
- Preheat the oven to 350F.
- Grease and flour a 9” inch springform pan.
- Whisk together the spices.
- Whisk in the rest of the dry ingredients.
- Cream together the sugar and butter.
- Add the eggs one at a time. Make sure each is fully incorporated into the batter before adding the next.
- Beat in the vanilla.
- Add the dry ingredients in thirds.
- Drain* the pears reserving 3 tablespoons of the liquid for the glaze.
- Pat off the excess liquid and gently fold the spiced pears into the batter.
- Transfer the batter to the prepared cake pan.
- Scatter the sprinkles over the top.
- Bake for 1 hour or until a knife inserted in the center of the cakes comes out clean.
- Let the cake cool in the pan for 15 minutes.
- D-pan the cake. Transfer to a wire cooling rack positioned over a parchment-lined baking sheet.
Spicy Icing:
- When the cake has cooled completely, whisk together the powdered sugar and the reserved liquid from the pears.
- Drizzle the glaze over the top of the cake.
- When the glaze has hardened, transfer the cake to a serving place.
- Cut and serve.
Recipe Notes
Save the liquid from the pears and the rest of the simple syrup. Combine it before storing it if you like. The liquid is great to add to cocktails, hot chocolate, or over ice cream.
