  • Sweet potatoes: The orange tuber is full of fiber and vitamins and has very little fat. With its slightly sweet taste, it is a perfect counterpart to the spicy minced meat. You can also use normal potatoes instead of the sweet potato. The baking time will then be extended by around 10 minutes.
  • Minced meat: We chose to use ground beef for our recipe, as it has a slightly more intense flavour than pork. However, you can also use mixed ground meat. If you buy your ground meat fresh from the butcher or meat counter, you should definitely use it within 24 hours. For a vegetarian version, you can also replace the ground meat with red kidney beans.

Creamy sweet potato minced meat casserole

  • Preheat the oven to 180 degrees. Prepare a baking dish.
  • Wash and peel the sweet potatoes and cut them into thin slices of about 3mm. Drain the tomatoes so that the casserole doesn’t become too watery. Layer the potatoes in the casserole dish. Add a layer of the drained tomato pieces in between and season with salt, pepper, paprika powder and thyme.

    800 g sweet potatoes, 1 tbsp thyme, 1 pinch of salt, pepper, paprika powder, 400 g tomatoes in pieces

  • Press the garlic into the cream, mix well and pour over the sweet potatoes.

    200 g cream, 2 garlic cloves

  • Finally, add the minced meat, feta and grated cheese on top.

    400 g minced meat, 200 g grated cheese, 200g feta

  • Bake in the oven for about 40 minutes, until the sweet potatoes are tender (test with a fork or knife after about 30-35 minutes).

As a vegetarian alternative, you can replace the minced meat with red kidney beans or fresh mushrooms.

  • Beans: Please do not use raw beans, but rather pre-cooked beans.
  • Mushrooms: Cut them into slices and let them collapse in a non-stick pan without oil for a few minutes so that they do not absorb too much water in the casserole.
