Apple sauce

Ingredients :
- 1 to 2 apples, diced
- 1 to 3 Medjool dates, pitted (optional)
- 1 stalk celery, chopped (optional)
- ¼ teaspoon cinnamon (optional)
Preparation :
- Combine diced apple and all other desired ingredients in a blender or food processor until smooth and well combined.
- Serve and enjoy immediately, or squeeze a little fresh lemon juice on top and seal tightly to store for later.

Apple crumble
Unripe apples are great for baking because they are firm and tart, giving them a deep apple flavor. Since they are not as sweet, it is recommended that you add sugar to taste.
This recipe is one of my favorite desserts that I make all the time. With or without ice cream, it is just as good. I love the aroma of cinnamon which goes wonderfully with the crispy crust.
Ingredients :
- 2 kg of green apples
- 2 tablespoons all-purpose flour, plus 2 cups for topping
- 3 cups white sugar or brown sugar
- 4 tablespoons lemon juice
- 3 teaspoons ground cinnamon
- 2 cups oatmeal
- 1 teaspoon baking powder
- 250 g unsalted butter, melted
- 1 pinch of salt
- vanilla ice cream (optional)
Preparation :
- Preheat the oven to 180°C.
- Peel the apples, then cut them into 1.5 cm cubes.
- Transfer them to a bowl, sprinkle with two tablespoons of flour, add 1 cup of sugar and 1 teaspoon of cinnamon, then pour in the lemon juice and mix.
- Then spread evenly in a baking dish and prepare the filling by mixing the oats, 2 cups of flour, 2 cups of sugar, baking powder, butter and salt until it forms lumps, like wet sand.
- Spread the filling over the apples, crumbling with your fingers if necessary to achieve a crumbly topping.
- Bake for 30 to 40 minutes or until apples are golden brown. Remove, cover loosely with foil to keep warm, and let stand for 10 minutes before serving.
- Serve warm with vanilla ice cream.

Unripe Green Apple Chutney
Green apple chutney is a great sweet and sour accompaniment to everything: on toast, in salads, as a marinade for grilled meats… the variations are endless.
Green apples are ideal for chutneys
Ingredients :
- 800 g of green apples, cut and cleaned
- 600 ml of white vinegar
- 400 g brown sugar
- 4 onions
- ½ red pepper
- 180 g raisins
- 40 g fresh ginger
- 2 cloves of garlic
- 2 tablespoons mustard seeds
- 2 dried chili peppers (optional)
- 1 tablespoon of salt
Preparation :
- Place the vinegar, brown sugar, salt and mustard seeds in a saucepan and bring to the boil for 5 minutes.
- Meanwhile, chop the apples, onions, bell pepper, ginger, garlic, chilies and transfer everything to the pot to bring to a boil once more.
- Cover and cook over low heat for 30 minutes, stirring occasionally.
- Then mix everything together and transfer to sterilized jars.
Here’s how to store unripe fruit
If you want to speed up the ripening of apples, Hubert Fontaine recommends betting on “stifled storage”. To do this, you will have to store the unripe apples in a cardboard box. Keep them covered until the ethylene ripens them. Remember to check them every day.
