  1. The dough: First, prepare the dough. It is made from buckwheat flour, salt, water, buttermilk and egg and should rest for a while after preparation.
  2. The sweet potatoes: Peel the sweet potatoes and dice them. Chop the garlic. Put some oil in a large pan and fry the sweet potatoes over medium heat. But be careful, as sweet potatoes are soft, you should only stir them gently and not too often. Then add the garlic and fry both until the garlic is soft and the sweet potatoes are browned.
  3. The Galettes: Heat some oil or butter in a large pan. Then add a ladle of batter. Swirl the pan back and forth until the batter is evenly distributed. Then fry the galettes on both sides until the edges are slightly crispy.
  4. The compilation: Leave the galettes in the pan on the stove, spread some cheese on top and let it melt. Crack the sweet potatoes and egg on top. Fry over a low heat until the egg has set. Spread the parsley on top, fold it up and serve with the yoghurt.
  5. Prepare egg on the galette or as a fried egg: Traditionally, the egg is fried on the galettes. However, if you think the egg won’t curdle, you can also fry a fried egg and place it on the sweet potatoes. I’ve tried both versions and found them to be good.

  1. First, prepare the dough. To do this, mix the buckwheat flour and salt with the cold water and buttermilk. Add the egg and mix to form a smooth dough. Let the dough rest for at least 30 minutes.
  2. In the meantime, prepare the sweet potatoes. Peel the sweet potatoes and cut them into small cubes. Put the olive oil in a suitable pan and heat it. Peel the garlic and chop finely. First fry the sweet potatoes over medium heat for about 5 minutes so that they take on some color. Then add the garlic and fry for another 5 minutes until it is soft. Set aside.
  3. Then grate the cheese. Set aside.
  4. Finish the galettes. To do this, heat a teaspoon of oil or butter in a large pan over medium heat and add a ladle of the batter. TIP 4: You can also fold the galettes on four sides. This is the traditional way of doing it. I simply folded mine in half. It’s easier.

TIP 5: If you want to do it particularly quickly or you think that the egg won’t curdle on the galettes, you can also fry a fried egg and place it on the sweet potatoes. Both methods work wonderfully.
