Marry Me Chicken - simple, delicious

We didn’t need a Marry Me Chicken for Benni to propose to me. Perhaps an “On your knees chicken” would have been helpful so that he wouldn’t have to deal with this situation 11 years after the wedding, but we’re not going to moan. The proposal and the preparation for it were accompanied by failures, bad luck and mishaps, which would be worth a blog post of its own. Nevertheless, today we have a recipe that is really super easy to cook and has this name.

Marry Me Chicken - simple, delicious

What is Marry Me Chicken and why this crazy name?

The story behind the name is almost as good as the recipe itself. Apparently, this creamy, cheesy chicken dish is SO delicious that it has provoked marriage proposals. I don’t know if that’s true, but I can assure you that it tastes damn good!

Marry Me Chicken is basically a creamy tomato sauce with tender chicken, sun-dried tomatoes, garlic and a good portion of parmesan. The whole thing is prepared in one pot, which means less washing up and more time to enjoy! The pasta doesn’t have to be cooked, though. I personally prefer the second pot option because I think the pasta tastes better that way. But, of course, that’s something everyone can decide for themselves.

It’s that easy: Marry Me Chicken in just a few steps

Breading chicken: Mix the flour, salt and pepper and coat the chicken cutlets in it.

Frying: Heat olive oil in a pan and fry the schnitzels until golden brown. Set aside for a moment.

Make the sauce: Sauté the onion and garlic in the pan, add tomato paste, spices and tomatoes. Deglaze with stock and cream and simmer.

Final: Stir in Parmesan, return chicken to the sauce and garnish with basil.

My insider tips

Dried tomatoes in oil: The dried tomatoes are marinated in oil, which already has the aromatic flavor of the tomatoes plus a few other herbs. So why waste it? Use the oil from the tomatoes for frying – it gives them extra flavor!

Parmesan: Use real Parmesan, not ready-made grated cheese. The taste makes the difference! Grana Padano will also work, of course. If you have family members who don’t like Parmesan, then use an old Gouda that can be grated. This will also make a super aromatic sauce.

Fresh basil: Just before serving, sprinkle freshly chopped basil on top – it not only looks pretty, it also tastes fantastic.

Why you will love this recipe (and your family will too!)

Lightning fast: The Marry Me Chicken is on the table in under 30 minutes. Perfect for stressful weekdays!

Beginner friendly: No complicated steps or unusual ingredients. You can get everything in the supermarket or discount store of your choice.

Child-friendly: The creamy sauce and tender chicken are guaranteed to be a hit with the little ones. The sauce can also be easily pureed so that any leftovers are not recognized by even the harshest critics.

Meal Prep: Cook a larger portion and enjoy the leftovers the next day. The sauce also tastes great with potatoes!
