The recipe is based on the zucchinis salad of one of my favorite chefs, namely Jamie Oliver. The salad is finished at lightning speed because you don’t need more than 10 minutes. Cut the ingredients, then prepare the dressing and mix everything together in a bowl. That was it.

What exactly is a zucchini?

Which zucchini varieties are there and which ones are best suited for zucchinis salad?
The zucchini family comes in all possible colors and shapes. And here are some of them:
- Green zucchini: The classic. It is available in most supermarkets.
- Yellow zucchini: It is a little sweeter in taste. It is therefore ideal for the zucchinis salad.
- Round zucchini: Because of its shape, this variety is perfect for filling and baking in the oven.
- Striped zucchini: These varieties are a great addition to colorful dishes.

As a nutritionist, I am always looking for food that are not only delicious, but also healthy. And the zucchini is exactly that:

Jamie Oliver’s zucchinis salad is perfect for summer. The combination of raw zucchini, sharp chilli and creamy mozzarella is simply irresistible. Here is my version with a small twist:
- Wash the zucchinis and cut into thin slices with a peeler. Place in a large bowl or bowl and set aside.
- Shoot the mozzarella and give it over the zucchinis.
- Halve the chilli, remove the seeds and cut them into small pieces. Add to the zucchinis and the Mozzarella.
- Prepare the dressing. To do this, stir the shell of a half amalfi lemon, the juice of the lemon and the olive oil with 1/2 teaspoon of salt and a little freshly ground black pepper and add over the zucchinis, the mozzarella and the chili.
- To serve, pour the mint or basil leaves over the salad.
