Our recipe for carrot soup with ginger
Now it will be delicious! You can buy all the ingredients in any supermarket. And the preparation is child’s play. In 30 minutes the soup is on the table and so it works:
Ingredients
- 1 kg of carrots
- 3 cm ginger (Daumendick)
- 6 sticks celery
- 3 laurel leaves
- 4 potatoes
- 2 onions
- Water
- 1 teaspoon salt
- Freshly ground black pepper
- To serve: parsley, roasted seeds and nuts

Preparation:
- Washes and cuts all ingredients small.
- Put everything in a large pot, fill it up water. Add the salt.

- As the soup boils parsley chop and cut ginger into pens to serve.
- Take two of the three bay leaves out of the soup and then puree everything (including one laurel blade) very fine. Season with salt and pepper.
- To serve: sprinkle some chopped parsley and a few slightly roasted nuts or seeds over the soup.
Notes
Tip 1: Serve the soup with cream fraiche, roasted bread, salad or grilled vegetables.
Tip 2: Replace about half of the water with coconut milk for an Asian touch and exchanges the parsley against coriander.
Tip 3: Do you like it sharper? Then just put some chilli in the soup. This is very tasty and fits harmoniously with the sweetness of the carrots.
